Olive Garden Copycat Chicken Gnocchi Soup
My version but better of the Olive Garden’s Chicken Gnocchi Soup.
Ingredients:
⁃ 1 package of potato gnocchi
⁃ 2 pounds of boneless chicken thighs
⁃ 2 c shredded carrots
⁃ 5 cups fresh baby spinach
⁃ 3 tbs chicken bouillon powder
⁃ 1 onion halved
⁃ 5 cloves of garlic
⁃ 2 tbs black pepper corns
⁃ 3 celery stalks
⁃ 4 bay leaves
⁃ 1 cinnamon stick
⁃ 3 tbs cooking oil
⁃ 1 pint of heavy whipping cream
⁃ 5 c water
⁃ 1 c fresh grated Parmesan
Sear the chicken in the cooking oil on both sides in your @instantpot on the sauté feature.
Add in the spices (I put them in the loose tea holder) the onion, celery, bouillon powder and the water. Use the pressure lid, and turn on the meat settings to 15 minutes. Release pressure when done. Remove everything from the broth. Shred the chicken, or chop. Turn the Instant pot back on to the sauté setting. Leaving it uncovered, add in the carrots and let them simmer for five minutes. Then, add in the gnocchi and chicken, let them simmer for five minutes. Once the gnocchi is cooked, you add in the cheese, spinach and heavy whipping cream. Let it simmer for another ten minutes stirring occasionally. Enjoy with extra Parmesan on top!
