We went to Michigan last weekend for Easter, so this week  has been a hectic week trying to play catch up.  For those of you wondering how it’s going, I’m still behind! Here are my goals for 2023: weeks 14 & 15 of 52. Personal Development My kids are older now, so I have a bit more time to devote to personal development.  So, these are the items I’d like to accomplish this year: Write in my journal for 150 days 6% accomplished.  No writing this week; I’m up to nine times for the year....

This recipe is an adaptation of the “Not Your Mom’s Meatloaf” from the BLE cookbook. But it IS my mom’s meatloaf…hahaha! Start with 2lbs (32oz) of ground beef. Add in 1 egg and 4oz marinara sauce. Measure 6oz cooked cauliflower rice and add to ground beef mixture. Next you are going to add in your spices (dried onion, garlic powder, Italian seasoning, salt and pepper) and mix thoroughly.
