Want manchurian but don’t want to deep fry the cauliflower? I present to you Air Fryer Gobi Manchurian. This gravy is FIRE. I would highly recommend the same gravy for a variety of vegetables and protein. You could easily use this as an appetizer or as a side dish. We served these with vegan potstickers, vegetarian fried rice, and vegetable paneer stir fry. I hope you’ll try this recipe for a quick weeknight meal!
Ingredients:
- For cauliflower:
- 1 head cauliflower
- 2 tbsp. all-purpose flour
- 2 tsp. corn starch
- 1/2 tsp lal mirch
- 1/2 tsp garlic powder
- salt and pepper
- Manchurian gravy
- 1 red onion, chopped
- 1 green bell pepper, chopped
- 1 jalapeno, finely diced
- 1 bunch green onions, diced, greens and whites separated
- 1/2 c. soy sauce
- 1/4 c. ketchup
- 1 tbsp. ginger paste
- 1 tbsp. garlic paste
- 2 tbsp. sriracha
- 3 tsp. cornstarch + 1/4 c. water for thickening agent.

Method:
- Cut up cauliflower into bite-sized florets and combined with all dry ingredients and a 1 tbsp oil. Pop these in the air fryer at 400° for 10 minutes, flip them over and go for another 10 minutes. If you don’t have an air fryer you can easily pop these in the oven at the same temperature until they get nice and crispy, be sure to flip them over half way so the texture is even!
- On medium-high heat, add 1/4 c. of oil in the bottom of a wok or deep skillet and add in ginger, garlic, and whites of green onions. Cook until the raw smell of garlic goes away.
3. Add in peppers, onions, and jalapenos. and all ingredients for the gravy except the cornstarch and water.
4. Add in the slurry of cornstarch and water and add in. Stir for 2-3 minutes for the gravy to thicken. Add in cauliflower and stir. Garnish with green onions and serve immediately!
