Buffalo Cauliflower Casserole

Ingredients
  • 2 cups vegetable broth
  • 1/2 cup buffalo hot sauce
  • 1/4 cup nutritional yeast
  • 1 teaspoon onion powder
  • 1 stalk of celery
  • 2 cups cooked chickpeas or canned
  • 1/2 head of cauliflower
  • 1 cup uncooked brown rice or cooked brown rice
  • 2 – 3 garlic cloves
  • 9″ x 13″ Pan

Instructions
  1. Preheat the oven to 400°F
  2. Bring to a boil vegetable broth, hot sauce, nutritional yeast, and onion powder
  3. In a 9″ x 13″ pan, pour 2 cups of chickpeas
  4. Pour cauliflower in and mix with chickpeas
  5. Pour brown rice over the top
  6. Remove sauce from heat and add garlic cloves
  7. Pour the sauce covering all the pan
  8. Cover pan with foil
  9. Bake in the middle rack of the oven for 60 minutes
  10. Remove from the oven and serve. Optional add vegan ranch and avocado on top
  11. Refrigerate leftovers for a week in a sealed container. Makes a great easy lunch to take to work or school.
