Ingredients
- 2 cups vegetable broth
- 1/2 cup buffalo hot sauce
- 1/4 cup nutritional yeast
- 1 teaspoon onion powder
- 1 stalk of celery
- 2 cups cooked chickpeas or canned
- 1/2 head of cauliflower
- 1 cup uncooked brown rice or cooked brown rice
- 2 – 3 garlic cloves
- 9″ x 13″ Pan

Instructions
- Preheat the oven to 400°F
- Bring to a boil vegetable broth, hot sauce, nutritional yeast, and onion powder
- In a 9″ x 13″ pan, pour 2 cups of chickpeas
- Pour cauliflower in and mix with chickpeas
- Pour brown rice over the top
- Remove sauce from heat and add garlic cloves
- Pour the sauce covering all the pan
- Cover pan with foil
- Bake in the middle rack of the oven for 60 minutes
- Remove from the oven and serve. Optional add vegan ranch and avocado on top
- Refrigerate leftovers for a week in a sealed container. Makes a great easy lunch to take to work or school.
