Pizza can be one of the most difficult things to give up when you are eating the BLE way (no flour, no sugar). It definitely was for me! This is another alternative to pizza crust that really hits the spot and gets in some of your veggies.

Start by cooking 16oz of cauliflower rice. I like the brand that Costco has, but any brand will do. Pour the “rice” in a colander lined with cheese cloth (you can buy this on Amazon if you can’t find it in stores).

Next you are going to squeeze as much water out of the “rice” as you can. Just keep going until it feels like the majority is gone. This is going to give you a better consistency in your crust.

Place the “rice” in a bowl and add 1/3 cup mozzarella cheese, 1 tbsp grated Parmesan cheese, an egg and your spices. Italian seasoning, garlic powder, onion powder, salt and pepper. Mix well.

Spread the “dough” evenly over a parchment lined baking stone or pan, making sure there isn’t any holes. This should measure approximately 11in in diameter. Cook this for 25 minutes in a 400 degree oven until brown and crispy.

Remove from oven and top with no sugar added pizza sauce (Rao’s marinara works great).

The crust by itself is part of your vegetables and protein (1/4 crust = 4oz vegetables and 1/2 protein) so your toppings are your choice to round out this meal!

Once your pizza is topped, return to oven and bake for an additional 15 minutes until cheese is browned. Recipe to follow.

  • 1 (16oz bag) frozen cauliflower rice
  • 1/3 cup shredded mozzarella cheese
  • 1 tbsp grated Parmesan cheese
  • 1 egg
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 3/4 tsp onion powder
  • Salt and pepper

Preheat oven to 400 degrees. Microwave cauliflower. Drain cauliflower in a colander lined with cheesecloth. Squeeze out as much liquid as possible.

Transfer drained cauliflower to a bowl and mix with remaining ingredients.

Line a baking pan or stone with parchment paper.

Form dough into a thin crust approximately 11 inches in diameter and with even thickness.

Bake for 25 minutes until brown and crispy.

Add sauce and desired toppings.

Bake an additional 15 minutes or until cheese is browned.

Crust makes 4 servings.
