Cauliflower Pakora

Every winter season, when cold breeze hits my face cravings for some hot and crispy pakora automatically increases. There are no other time in the year when you can enjoy cauliflower pakoras to the fullest. And when you get to drink some hot tea or coffee with this, it just reminds me of the heaven on earth.

Now let’s take a look at the various ingredients required to prepare this dish.

Ingredients :

  • Cauliflower – 20 pieces (medium sized)
  • Salt – as per taste
  • Besan (gram flour) – 1 cup
  • Rice flour – 1 tablespoon
  • Chili powder – 1 teaspoon
  • Asafoetida – 2 pinch
  • Black pepper powder – 1/2 teaspoon
  • Black salt – 1/4 teaspoon
  • Water – 1.5 cups
  • Turmeric powder – 2 pinch
  • Oil – 200ml

Now that we know all the required ingredients let’s hop on to the preparation process.

Preparation :

STEP -1
Take a big bowl, add water, salt and turmeric powder and then bring it to boil at high flame. Now blanch the cauliflower pieces in the boiling water for around 2 minutes. Then strain the water completely and keep the blanched cauliflower aside.

STEP -2
Now take another bowl, start adding salt, Besan (gram flour), rice flour, chili powder and Asafoetida. Then add some water and 1 teaspoon oil to make a semi liquid batter.

STEP – 3
Now take one piece of cauliflower at a time, dip it completely in the batter and deep fry until crispy.

Now cauliflower pakora is finally ready.

Serving recommendations :

Serve thus snack hot and crispy with a slight topping of black pepper powder and black salt and this could also be served with a side of tomato ketchup, masala tea and coffee.
