Ditch the salty seasoning packets that come with ramen and make this healthy and delicious chicken stir fry instead in just 30 minutes!
Ingredients and substitutions
- Ramen noodles – I used the Mr. Noodles version but you can use any variety of your choice.
- Broccoli – cauliflower would also be good in this stir fry.
- Tamari – use low-sodium soy sauce or coconut aminos instead.
- Hoisin sauce – swap out for oyster sauce if you don’t have any hoisin sauce on hand.
- Garlic – I prefer freshly minced garlic but jarred minced garlic will work in a pinch.
- Olive oil – or another neutral cooking oil such as avocado or grapeseed oil.
- Chicken breasts – chicken thighs can be used instead but they’ll increase the calorie count. You can also make this stir fry with shrimp or beef!
- Green onions – chives or scallions would also be good here.
- Sesame seeds – white or black sesame seeds can be used.
How to make stir fry with ramen
- Discard the seasoning packs.
- Boil the noodles.
- Add in the broccoli.
- Cook the chicken.
- Toss everything together.
- Serve and enjoy!
What is ramen?
Ramen is a Japanese noodle dish that contains Chinese-style noodles that are served in broth, often with extra toppings like seaweed, pork or chicken.
For this recipe, I used tasty ramen noodles to make an amazing and healthy stir fry. You’ll still get all the delicious flavours of your favourite ramen, but in a dish that has way less preservatives than the sodium-filled flavour packets that ramen normally comes with.

Ramen has a pretty mild flavour on its own, so you’ll definitely want something to go with it. Throw out the packets that ramen noodles come from – those are full of preservatives and salt – and whip up this easy stir fry. The soy sauce, hoisin sauce and garlic give the ramen noodles plenty of flavour and the noodles taste great with the broccoli and chicken!
The options are pretty much endless when it comes to what you can put in your ramen stir fry. It’s a great way to clear out your vegetable crisper! I added chicken and broccoli to my stir fry but feel free to experiment with different ingredients like shrimp, beef, bok choy, red peppers, mushrooms and more.

Storing and reheating
This stir fry is great for meal prep and will last in the fridge for up to 5 days. After the dish has completely cooled, transfer individual serving sizes to glass containers or meal prep bowls and you’ve got your lunches sorted for the week!
When you’re ready to enjoy your stir fry, pull a container out of the fridge and sprinkle some water over top. This will ensure that the chicken and noodles don’t dry out. Stick it in the microwave and reheat for 2-3 minutes until cooked through.
Freezing this recipe
I wouldn’t recommend freezing this recipe – the ramen noodles won’t defrost very well and will get all mushy. That being said, you can freeze the cooked chicken on its own for up to 3 months so you can use it to make a fresh stir fry. Just store it in an airtight glass container or freezer-safe Ziploc bag!

Chicken Ramen Stir Fry {Easy 30-Minute Meal}
Ingredients
- 2 (85g) bags ramen noodles such as Mr Noodles
- 1 head broccoli chopped
- 2 tbsp tamari or low sodium soy sauce
- 2 tbsp hoisin sauce
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 2 chicken breasts cut in into 1-inch pieces
- 4 green onions sliced, for garnish
- Sesame seeds for garnish
Instructions
- Bring a large pot of water to a boil on the stove, then add ramen noodle packs, discarding the seasoning packs. Cook for 2 minutes, adding broccoli in during the last minute of cook time, then drain and set aside.
- Mix soy sauce, hoisin sauce and garlic in a small bowl and set aside.
- Meanwhile, heat olive oil in a large skillet over medium-high heat. Add chicken, seasoning with salt and pepper. Cook for 6-7 minutes until browned and cooked through, then add in cooked ramen, broccoli and sauce mixture, tossing gently to combine. Cook for 1-2 minutes until sauce thickens.
- Remove from heat, then garnish with green onions and sesame seeds. Serve and enjoy!
