Creamy Cauliflower & Potato Soup



This soup is so yummy! I made it the other night solely because I had cauliflower that needed to be used and I had zero desire to actually eat cauliflower Winking smile This is definitely something Ill make again because my husband and I both enjoyed it.

Creamy Cauliflower and Potato Soup


  • 1 head of cauliflower, chopped
  • 2 potatoes, chopped
  • 1/2 sweet onion, chopped
  • 1 can full fat coconut milk
  • 1 tbsp. minced garlic
  • 1 tbsp. thyme
  • 1 tbsp. rosemary
  • 2 tbsp. nutritional yeast
  • 1/2 tsp. garlic powder
  • 1 tsp. sea salt
  • 1 tsp. black pepper
  • 3 pieces of low sodium bacon


  1. If bacon is not already cooked, preheat oven to 350, place bacon on cookie sheet and bake until crispy
  2. In a pot, add cauliflower, potatoes, and onion. Add enough water to cover. Cook until all ingredients are fork tender
  3. Drain and add ingredients to a high speed blender
  4. Add remaining ingredients (except bacon) to blender and pulse until creamy
  5. Crumble bacon pieces into soup and stir to mix in (or leave on top for garnish)
  6. Enjoy!

I havent tried this in the crockpot yet but Im planning to do that next time for a quick weeknight meal!
