This soup is so yummy! I made it the other night solely because I had cauliflower that needed to be used and I had zero desire to actually eat cauliflower This is definitely something Ill make again because my husband and I both enjoyed it.
Creamy Cauliflower and Potato Soup
Ingredients
- 1 head of cauliflower, chopped
- 2 potatoes, chopped
- 1/2 sweet onion, chopped
- 1 can full fat coconut milk
- 1 tbsp. minced garlic
- 1 tbsp. thyme
- 1 tbsp. rosemary
- 2 tbsp. nutritional yeast
- 1/2 tsp. garlic powder
- 1 tsp. sea salt
- 1 tsp. black pepper
- 3 pieces of low sodium bacon
Directions
- If bacon is not already cooked, preheat oven to 350, place bacon on cookie sheet and bake until crispy
- In a pot, add cauliflower, potatoes, and onion. Add enough water to cover. Cook until all ingredients are fork tender
- Drain and add ingredients to a high speed blender
- Add remaining ingredients (except bacon) to blender and pulse until creamy
- Crumble bacon pieces into soup and stir to mix in (or leave on top for garnish)
- Enjoy!
I havent tried this in the crockpot yet but Im planning to do that next time for a quick weeknight meal!
