This delicious cauliflower and broccoli casserole by Hearty and Tasty is the perfect dish at any time of the day. You can have it for breakfast, lunch, or dinner! It’s flavorful, cheesy, and healthy. People who don’t like vegetables will surely enjoy this too.
Ingredients:
- 15.9 oz of cauliflower
- 10.6 oz of broccoli
- salt, black pepper, and curry powder
- olive oil
- 2 tablespoons of milk
- 1 onion (chopped)
- 1 carrot (diced)
- 2 bell pepper (diced)
- 8.11 oz of cherry tomatoes (sliced in halves)
- 5 egg
- 0.4 oz of fat cream
- 0.8 cups of flour
- parsley (chopped)
- dill (chopped)
- 2.5 oz of cheese (grated)
- 2 tablespoons of greek yogurt
- 1 tablespoon of mayonnaise
- 2 cloves of garlic
Instructions:
Step 1:
Slice the cauliflower and broccoli into small pieces and place them in a pot.
Step 2:
Fill the pot with water and place over heat. Add salt and 2 tablespoons of milk, then let it come to a boil. Let it come to a boil. Once boiling, let it cook for 2 minutes.
Step 3:
Strain the broccoli and cauliflower and place them on a casserole.
Step 4:
Drizzle some olive oil on a pan over heat. Add the chopped onion and saute until translucent. Next, add the carrots and cook for 3 minutes. After that, transfer to the casserole.
Step 5:
Put the chopped bell peppers into the casserole and mix them with the vegetables. Top it with cherry tomatoes.
Step 6:
Crack 5 eggs and place in a bowl. Season with salt, black pepper, and curry powder. Beat well with a whisk then add the fat cream. Mix until well incorporated.
Step 7:
Add the flour and parsley to the egg mixture and mix. Pour into the vegetables, then top with shredded cheese.
Step 8:
Bake the casserole at 356F for about 40 minutes.
Step 9:
In a bowl, add 2 tablespoons of greek yogurt, 1 tablespoon of mayonnaise, 2 cloves of garlic grated, and chopped dill. Mix until well combined.
Step 10:
Once done baking, remove the casserole from the oven and slice. Serve on a plate with the sauce. Enjoy!
