Easter Weekend 2022 Recap

Hi friends; happy Monday! I hope you’re doing well this morning. I have a sleeping puppy curled up next to me, probably sleeping off the effects of the granola bar she just stole off the counter and devoured.

Our Easter weekend kicked off Thursday with a visit from Mema! She came armed with an adorable scavenger hunt with clues that led the girls all over the house in search of treats. The kids loved it!

Friday I grabbed lunch with a friend, Hailey had her second Synthesis session, and I made a giant snack plate for dinner with whatever odds and end were left in the fridge. David and I stayed up in pajamas talking through the details of our June trip. We are going to visit Vermejo in New Mexico and The Great Sand Dunes National Park.

Saturday started stormy but turned into the most beautiful spring day. We started with dying eggs, and laughing hard as we blew out the insides. A friend hosted an egg hunt for the kids in the afternoon were they got to hunt over 600 hundred eggs! Saturday evening we celebrated my friend, Liz, turning 40. Her husband rented a stretch Excursion that took a group of us into Charlotte.

Our first stop was Noda brewery; my first time there but I mentally noted it is a great spot for kids and dogs. Liz is a chef and catering extraordinaire and put together the cutest charcuterie cups for us to have at the brewery!

Then we headed to dinner at Kid Cashew, a restaurant I’ve been wanting to try for so long. The food did not disappoint! Both David’s gyro wrap and my grilled octopus were excellent, as was the dip trio. The whole evening was such a switch up from our usual routine and I loved getting to help celebrate the birthday girl!

Easter morning the girls came downstairs to discover our Easter Bunny hid eggs outside this year. We all agreed this was super fun and hope he continues to do the same in the future. We came inside after finding all the eggs, with a little help from Finley’s sniffer, to make breakfast. I did my best effort to make the bunny cinnamon rolls but they definitely didn’t end up matching the cute ones I’ve seen online. The kids still enjoyed them though!

I don’t have any cute family Easter picture to share, as we watched church in our pajamas. My goal to try three new churches in the first three months of the year is an utter failure. Time to step up that effort.

Sunday afternoon passed by in a blur of outside play, leg day, laundry, and packing. The girls and I head to Tennessee this week to do a lot of work on the rental properties. I know it will be a lot but I’m looking forward to it!

For Easter dinner I roasted the Butcher Box turkey that has been in our freezer since November. I made a salad of radish greens and spinach with goat cheese, strawberries, and slivered almonds to go with it, outsourced the sides as Kevin’s brussels and mashed cauliflower were BOGO at Publix, and baked sourdough rolls from Wildgrain Box (use code AHEALTHYSLICE for $30 off your first box and free sourdough rolls in every box).

And that’s a wrap. Now off to pack up the car and head west. I hope to finish my 12 Rules for Life audiobook on the drive and have downloaded Unlocking The Keto Code to start once I’m done. Next stop, Tennessee!
