If cauliflower is your least favorite vegetable to roast, this recipe from RecipeTin Eats will change your mind. I used to hate cauliflower until I discovered this recipe on Youtube. It has crispy edges and a soft inside that feels like melting in your mouth. It’s a crowd favorite in my house, and I serve this almost every day! Learn the recipe by watching the video below.
Ingredients:
- 1 large head cauliflower, cut into florets
- 2 & 1/2 tbsp olive oil
- 1/2 tsp each of salt and pepper
- 2 garlic cloves, finely minced
- 1 tbsp parsley, roughly chopped (optional)
Directions:
Step 1
Preheat your oven to 425 degrees F. Next, cut the cauliflower into florets and transfer them to a mixing bowl. Season with 2 & 1/2 tbsp olive oil, 1/2 tsp salt, 1/2 tsp black pepper, and 2 cloves of minced garlic. Toss well.
Step 2
Spread the cauliflower onto a baking tray and put it in the preheated oven. Roast for 20 minutes. After 20 minutes, flip the cauliflower, then roast for another five minutes until golden edges and soft. Transfer to a serving plate and garnish with chopped parsley (optional).
