One of our Instagram followers requested this and figured out a way to make a BLEized version!

Melt 2 tbsp of butter and then add 1 1/2 lb of sweet yellow onions, thinly sliced. Cook them for 30-40 minutes until we’ll caramelized.

Add 1 clove of minced garlic, sautéing for 1 minute, then use 2 tbsp of beef stock to deglaze the pan.

Add in 1 tsp thyme, 1 bay leaf, 1 tsp red wine vinegar, salt and pepper. Then add 3 cups of beef stock, bring to a boil, reduce heat and simmer for 15 minutes.

Break cauliflower into large florets and slice thinly to make small cauliflower “steaks.” Drizzle with olive oil and salt and pepper. Roast in a 400 degree oven for 15-20 minutes or until tender.

Ladle the soup into 4 separate bowls. Place 1/4 of the cauliflower “steaks” in each and then top with 1 slice of baby Swiss. Broil on high for 3-4 minutes.

This recipe makes for servings. Each serving has 1/2 protein, full fat and 6oz of vegetables. Recipe to follow.

  • 1 clove garlic, minced
  • 3 cups + 2 tbsp beef stock
  • 1 tsp thyme
  • 1 bay leaf
  • 1 tsp red wine vinegar
  • Salt and pepper
  • 1/2 head cauliflower
  • 4 slices baby Swiss cheese

Break cauliflower into large florets and slice thinly to make small cauliflower “steaks”. Drizzle with olive oil and salt and pepper. Roast for 15-20 minutes until tender.

Melt butter in a large Dutch oven over medium heat. Add onions and cook, stirring often, until deep golden brown and caramelizad, 30-40 minutes. Stir in garlic and sauté about 1 minute.

Stir in 2 tbsp beef stock, scraping any browned bits from the bottom of the pot.

Stir in the remaining beef stock, thyme and bay leaf. Bring to a boil; reduce heat and simmer, stirring occasionally, until slightly reduced, about 15-20 minutes. Remove bay leaf.

Stir in wine vinegar, and season with salt and pepper.

Preheat oven to broil. Divide soup into ramekins. Place on baking sheet. Top with cauliflower steaks and 1 slice of cheese.

Place in oven and broil until golden brown and cheese has melted; 3-4 minutes.

1 serving = 1/2 protein, full fat and 6oz vegetables
