Fresh and Easy Dill Pesto with Lemon

This fresh lemon dill and walnut pesto recipe is made with olive oil, garlic, Parmesan cheese (vegans use nutritional yeast), and zested up with a wee bit of fresh lemon juice.

Ever had a bunch of dill left over from a recipe that only called for a couple Tablespoons? Homemade dill pesto is the perfect recipe to make with the leftovers from a bunch of dill.

Serve fresh lemon dill pesto with pasta, gnocchi, on vegetables, meats, or on seafood like salmon or cod. Add more oil or water to this dill pesto recipe and create a light salad dressing.

This dill and walnut pesto recipe was made with the ingredients that I have in my refrigerator.  What's in your fridge?  Switch out the herbs if you don't have dill to whatever you have on hand (basil, parsley, cilantro, mint).

Nuts in pesto recipes can also be switched out to what you have available in the pantry - cashews, pistachios, brazil nuts, macadamia nuts, etc...

Make homemade dill pesto chunkier or smooth depending on your preference. Blend pesto ingredients in the food processor or blender for a long time for smooth pesto. Conversely, blend the ingredients in short and fast pulses for chunkier lemon dill pesto.

Can Lemon Dill Pesto Be Made Vegan / Dairy Free?

Dill pesto can be made vegan by:

  1. Omitting the Parmesan cheese and focusing on the herbs, oils, and nuts.
  2. Substituting a couple Tablespoons of nutritional yeast (it has that stanky Parmesan cheese flavor umami taste).
  3. Substituting a non-dairy alternative Parmesan cheese from the grocery store. Vegan alternatives are generally located next to the regular cheese section or next to the tofu or alternative meat and cheese section.

Does Dill Pesto Freeze?

Yes sir, yes ma'am!

Freeze leftover homemade dill pesto in ice cube trays as individual cubes or freeze flat in a snack size ziploc bags. Break off and thaw the amount of pesto needed, and keep the rest frozen in the ziploc bag for later.

Ingredients

Units
  • 2 cups (~ 2 oz) dill, tough stems removed
  • ¼ cup walnuts
  • 1 large clove garlic
  • ¼ cup olive oil
  • 2 Tbsp water
  • 2 Tbsp lemon juice
  • ¼ tsp salt
  • ¼ cup Parmesan cheese - optional

Instructions

  • Place all ingredients in a blender or food processor.  
  • Add more water, lemon juice, or oil if you want a thinner consistency.
