While I was working on my second book, I went through a period of freelance recipe development for Food & Wine Magazine. They were just starting to build out their online recipe database offerings, and my assignments usually fell into topic buckets of 10 or so recipes that needed to be completed in a short amount of time.

It left me feeling like I was a contestant on a cooking show, though I never got to leave my kitchen and there was no one else there to witness my trials and tribulations with rice and beans. Or to eat all of them, batch after endless batch.

There was a whole week when I made nothing but gluten-free cakes, and another with ten variations on pad Thai. While the latter is definitely one of my favorite foods, after eating it for breakfast, lunch and dinner, I was ready to rethink my love affair.

Because of the variety it allowed for, I was at my happiest during casserole week. I got to experiment with baked shrimp casserole, healthy creamed spinach, potato gratins, and vegetarian casserole recipes like this healthy cauliflower bake.

Like any good dump and stir recipe, this curried cauliflower casserole only requires a few ingredients mixed together and turned out into a baking dish. Whole full-fat unsweetened yogurt makes it rich and creamy, yet still light and healthy versus the usual sour cream. It also melds with the Indian-inspired Madras curry powder and anti-inflammatory turmeric. Chives give the cauliflower bake a hint of brightness, while the golden raisins add sweetness to the mild curry sauce.

If you don’t like any one of these ingredients, the cauliflower casserole is easy to adapt to suit a variety of dietary restrictions (though not you, low FODMAP folks).

Can you make this cauliflower casserole Keto?

Cauliflower is naturally low carb and an excellent option for keto casseroles that replace your favorite loaded potatoes. To make this a keto cauliflower bake simply omit the raisins and breadcrumbs. Everything else is fair game.

To make this vegetarian casserole also dairy-free, simply use a plant-based yogurt.

The cauliflower casserole is naturally gluten-free so long as you use gluten-free breadcrumbs.

Curried Cauliflower Casserole (Gluten-Free)

Ingredients

  • 4 cups small cauliflower florets from 1 medium head cauliflower
  • 6 ounces full fat plain Greek yogurt
  • 1/4 cup finely chopped chives plus more for garnish
  • 1/4 cup roughly chopped cashews
  • 2 tablespoons golden or regular raisins
  • 1 tablespoon Madras curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • 1/4 cup vegetable or chicken stock
  • 1/3 cup fresh gluten-free bread crumbs

Instructions

  • Preheat the oven to 400° F and grease a shallow 9-by-13-inch baking or casserole dish.
  • In a large bowl, combine the cauliflower, yogurt, chives, raisins, cashews, curry powder, turmeric, and salt. Transfer the mixture to the prepared dish, spread in an even layer. Pour in the stock, and cover with foil.
  • Bake the cauliflower casserole for 20 minutes, until the florets are semi-tender. Remove the foil, sprinkle with the breadcrumbs (you can add a drizzle of olive oil too) and return to the oven. Bake uncovered for about 15 minutes, or until the liquid has evaporated, the topping is crusty and the cauliflower is fork tender but not falling apart.
  • Garnish the cauliflower casserole with additional chives and serve warm.
