MARINATING YOUR MEAT FOR KEBABS

Chicken that has been marinated will always taste better than plain meat…that’s a fact. You can marinate the day of grilling for as little as 30 minutes. However, you could also make it the night before and allow the chicken to marinate overnight for an even more-enhanced flavoring. The marinade also helps tenderize the meat.

Ingredients In the Grilled Red Onion, Chicken & Mint Kebabs

  • Tanimura & Antle Artisan® Sweet Red Onion
  • Skinless, boneless chicken breast
  • Olive oil, divided
  • Garlic cloves, minced
  • Fresh mint, chopped
  • Dried oregano
  • Salt
  • Ground black pepper
  • Lemon juice
  • Fresh mint sprigs
  • Cherry tomatoes

How to Make Grilled Red Onion, Chicken & Mint Kebabs

We love making kebabs with fresh produce. And, they really are easy-to-make. Plus, kids love eating anything on a stick, even vegetables.

First things first, cut chicken breast into 1 inch pieces. In a bowl, you will mix some olive oil, minced garlic, chopped mint. oregano, salt and pepper. Use this to cover and marinate the cubed chicken pieces for approximately 30 minutes.

While the chicken is marinating, cut the Tanimura & Antle Artisan® Sweet Red Onion into 1 inch pieces. You will want to try and keep together three layers in each piece. Next, whisk together the remaining olive oil and lemon juice. Then, prepare your skewers by alternating chicken, mint leaves, red onions, and cherry tomatoes. Brush the lemon and olive oil mixture over the skewers and let marinate for at least 30 minutes.

Finally, you can season your kebabs and grill over medium heat for about 10 minutes each.

TIPS FOR MAKING THE BEST kebabS

  • Try to chop all the veggies and meats approximately equal in size and shape. They do not have to be perfect, but the uniformity helps when grilling.
  • If you are using wood skewers, we recommend soaking them for about 15 minutes.
  • Placing the red onion on each end will help make sure other pieces don’t slide off the kebab.
  • Alternate between the different vegetables and meats. Leave a small space between each. Remember that the sweet red onions have natural curves which prevents the other veggies from laying flat on one another. 
  • Don’t be scared of a little browning or charring around the edges.

Ingredients

  • 1 Large Tanimura & Antle Artisan® Sweet Red Onion
  • 1 1/2 lbs. Skinless, boneless chicken breast
  • 4 Tbsp Olive Oil divided
  • 4 Garlic cloves minced
  • 2 tsp Fresh mint chopped
  • 1 tsp Dried oregano
  • 1 1/2 tsp Salt
  • 1 tsp Ground black pepper
  • 2 Tbsp Lemon juice
  • 6 sprigs Fresh mint
  • 16 Cherry tomatoes

Instructions

  • Cut chicken breast into 1 inch pieces and place into a medium size mixing bowl.
  • Add 2 tablespoons olive oil, minced garlic, chopped mint, oregano, salt and pepper. Stir to cover and combine.  Marinate for at least 30 minutes.
  • While chicken marinates, cut Artisan Sweet Red Onion into 1-inch pieces, keeping together three layers in each piece.
  • In a small bowl, whisk together remaining olive oil and lemon juice.  Set aside.
  • Prepare skewers by alternating chicken, mint leaves, onions and cherry tomatoes. Place in glass dish or gallon zip lock bag.
  • Brush lemon and olive oil mixture over prepared skewers and let marinate another 30 minutes.
  • Prepare bbq or heat grill pan over medium heat.
  • Season kebabs with salt and pepper then grill over medium heat for about 10 minutes each.
