Jerk Chicken with Cauliflower Rice


The best thing about this meal is that it’s extremely filling… but without all the calories.

For my lunch… just yumm.😋😋


Makes 4 servings

  • 4 – Chicken Breast
  • 4 cup – Cauliflower, chopped
  • 1/2 large – Red Bell Pepper
  • 2 tbsp – Parsley, fresh
  • 3/4 cup – Chicken Broth
  • 4 tbsp – Olive Oil
  • 4 tbsp – Butter
  • 1 tbsp – Lime Juice
  • 2 tbsp – Jerk Seasoning
  • to taste – Salt and Pepper


  1. Cut chicken into small pieces and season with half the amount of jerk seasoning.
  2. Drizzle olive oil over top to coat each piece well.
  3. Refrigerate for 30 minutes or longer.
  4. Place cauliflower into a food processor and process until it resembles rice.
  5. Set rice aside.
  6. Place a nonstick pan over medium heat and melt butter.
  7. Add chicken to heated pan and cook for 10 minutes on both sides.
  8. Add chopped bell pepper and pour in chicken broth.
  9. Sprinkle the remaining jerk seasoning and continue to cook until most of the liquid has evaporated.
  10. Mix in cauliflower rice and cook until heated through.
  11. Season with salt and pepper.
  12. Drizzle lime juice and garnish with chopped parsley.
