The best thing about this meal is that it’s extremely filling… but without all the calories.
Ingredients
Makes 4 servings
- 4 – Chicken Breast
- 4 cup – Cauliflower, chopped
- 1/2 large – Red Bell Pepper
- 2 tbsp – Parsley, fresh
- 3/4 cup – Chicken Broth
- 4 tbsp – Olive Oil
- 4 tbsp – Butter
- 1 tbsp – Lime Juice
- 2 tbsp – Jerk Seasoning
- to taste – Salt and Pepper
Directions
- Cut chicken into small pieces and season with half the amount of jerk seasoning.
- Drizzle olive oil over top to coat each piece well.
- Refrigerate for 30 minutes or longer.
- Place cauliflower into a food processor and process until it resembles rice.
- Set rice aside.
- Place a nonstick pan over medium heat and melt butter.
- Add chicken to heated pan and cook for 10 minutes on both sides.
- Add chopped bell pepper and pour in chicken broth.
- Sprinkle the remaining jerk seasoning and continue to cook until most of the liquid has evaporated.
- Mix in cauliflower rice and cook until heated through.
- Season with salt and pepper.
- Drizzle lime juice and garnish with chopped parsley.
