Meal Prep & Menu Plan for February 27 2023

This post contains affiliate links.  I’m getting into the swing of having additional work hours and still trying to get my normal responsibilities done.  One of the keys is to meal prep on Sundays.

Meal prep including banana muffins, ground beef, roasted chicken, vegetable soup, and ham and broccoli quiche

Meal Prep

roasted chicken,

taco meat,

two pounds of browned ground beef for the freezer,

Banana Muffins,

Ham, Broccoli & Cheddar Frittata,

Whole 30 Mediterranean Soup,

Menu Plan

Saturday

Lunch–White Bean Spinach Soup (left out the pasta & added mushrooms), turkey burgers
Dinner–Leftover turkey pot pie,

Sunday

Lunch–Cod, diced potatoes, Brussells sprouts
Dinner–Bottom Round Roast, sweet potatoes, broccoli

Monday

Lunch–leftover turkey burgers, diced potatoes, green beans
Dinner–Tacos, refried beans, lettuce, tomatoes, guacamole

Tuesday

Lunch–leftover cod, french fries, roasted cauliflower
Dinner–Ham, Broccoli & Cheddar Frittata,

Wednesday

Lunch–ham sandwiches, nacho chips, carrot sticks
Dinner–roasted chicken, Whole 30 Mediterranean Soup,

Thursday

Lunch–hot dogs, french fries, peas
Dinner–Chicken Gnocchi Soup,

Friday

Lunch–leftovers
Dinner–Spaghetti with beef & mushrooms,
