This post contains affiliate links. We had a busy week traveling and getting Bookworm settled for college. (More on that on Wednesday.) So, our meals weren’t quite like I would like them to be. But, now we’re home, so hopefully I can finally make a few meals to put in the freezer some time soon. Here’s our menu plan and meal prep for September 5 2022:
Meal Prep
For meal prep, I made deviled eggs and Banana Muffins.

Saturday
Lunch–sushi, salad
Dinner–Bacon & Corn Stuffed Peppers (I added black beans & Daiya cheese into the pepper mixture.)
Sunday
Lunch–Steak, diced potatoes, roasted cauliflower, cucumbers
Dinner–Tacos, guacamole, chips
Monday
Lunch–Bean & Bacon Soup,
Dinner–Chicken nuggets, tater tots, cole slaw
Tuesday
Lunch–Daiya Santa Fe burritos, guacamole, chips, cucumber slices
Dinner–Salmon, Miso Soup, roasted carrots and golden beets
Wednesday
Lunch–Chipotle
Dinner–Breakfast for Dinner
Thursday
Lunch–Spaghetti, cucumber slices
Dinner–Chicken strips, broccoli, veggie straws
Friday
Lunch–Chipotle (This was a crazy day trying to get things ready for Bookworm’s school. We didn’t get to eat lunch until 2:30 in the afternoon!)
Dinner–Since we ate lunch so late, the kids just snacked on fruit and deviled eggs in the evening.
