It’s not Mother’s Day but my mother-in-law’s birthday is in a couple of weeks and I am going to make this light, bright parfait for her.
Smoked Salmon Parfait with Roasted Vegetables
I have 2 versions of this recipe. One with roasted vegetables and the other with mashed avocados with lime. Both are below. And both are delicious. The avocado recipe is much quicker and does not require any cooking. In the vegetable version, I chose seasonal vegetables: cauliflower, broccoli, and fennel, roasted and pureed them — yum!!
Cauliflower is a flowering vegetable in the cruciferous family. Other cruciferous vegetables include bok choy, collard greens, broccoli, brussel sprouts, and of course cabbage. Cruciferous vegetables have been linked to a reduction in cancer risk, especially prostate cancer.
Cauliflower is high in fiber and loaded with antioxidants. Antioxidants are essential for prevention of heart disease, cancer, and stroke. It is also a good source of plant omega-3 fatty acids, folate and other B vitamins.
