QUARANTINE EATS

admin

two FACTS…we have all been stuck at home and we have all been stuck at home EATING. Cooking is one of my favorite hobbies, so I have been hard at work. Here are some of my favorite things I have cooked or eaten over the quarantine.

Bibb lettuce chopped salad

sweet potato/avocado tower

zucchini lasagna boats

gluten free blueberry pancakes

chickpea salad with vegan chive cream cheese and gluten free everything bagel

caprese salad with vegan mozzarella and fresh basil

red lentil pasta with cherry tomatoes, mushrooms, chopped garlic, fresh herbs, and olive oil

salmon rolls with cream cheese, capers and everything but the bagel seasoning

tuna salad melts

red fish, red snapper and grouper all cooked with various sides

cauliflower rice and chicken stuffed bell peppers

buffalo cauliflower and chickpeas featuring my orange Topo Chico mocktail

cauliflower crust pizza

rancheros inspired breakfast

red curry chick pea patties, butternut squash and asparagus…all tied together with a dirty martini lol (not a pairing specialists, just working with what’s on hand)

shepherds pie made with lentils, mushrooms and no dairy-one of the top hits of quarantine

vegan and dairy free lemon olive oil cake

Mediterranean stuffed eggplant

spaghetti squash pad thai – my personal favorite of the quarantine

oatmeal chocolate chip cookies-gluten free

smoothie bowls

last but not least, my family ate one of the most special meals of all time during this time at home. My grandmother Sue Sue, who unexpectedly passed away in February, is the ultimate chef and has been a cooking role model to me for as long as I can remember. One of the MANY things she is famous for is her Gourmet-To-Go, delicious home cooked meals for people to take home and put in the oven. My family had one last Sue Sue meal in the freezer, a chicken pot pie. It was amazing, and eating it brought me to tears. Although quarantine and the pandemic have been hard on so many people, I have valued and loved the time I have spent at home cooking with my family.

XOXO!
