The other day I went to the fish market (I’m pretty sure I’ve talked about this on every platform and in multiple blog posts…we get it Juli, you are weirdly excited about buying fish at a fish market instead of a grocery store, calm down) to see what looked good and the fish monger recommended the halibut. So that’s exactly what I bought. And I immediately began craving coconut rice. I haven’t had coconut rice is YEARS. What have I been doing with my life? Nothing. The answer is nothing. So guess what I made that night? PERFECTLY cooked halibut, to die for, with coconut rice and mandarin orange salsa. It was glorious. It deserves a spot on the blog. And I’m going to make that happen next week. Because I have to go back to the fish market. Did I mention I went to the fish market?

Now you’ll find a lot of different types of coconut rice out there, but I personally like mine sticky. I don’t rinse my rice (I understand this is a sin by most people) and I use less water than most recipes I’ve seen. But I find that it leaves the rice sticky from the coconut milk instead of creating a rice that easily falls apart when you pick it up with a fork. I want my rice to stick together, almost like it’s coated in a little bit of peanut butter. OMG…is peanut butter rice a thing? How incredible does that sound? Like pad thai, but with rice instead? Neeeeeed to make.

Not only did I use this coconut rice for my halibut, but then I paired it with some salmon poke I made. I got the sushi-grade salmon at…the fish market! Is this place my new favorite spot in the whole wide world? Seems like it. This is what happens when you have a new child and you’re a recluse so the only time you leave the house with your child is when food is involved.

Well turns out the sweetness of coconut rice pairs PERFECTLY with the saltiness and bite of ginger and soy sauce marinated salmon. I actually shared the recipe for my salmon poke on my fitness app. Is coconut rice with poke ANOTHER sin? I’ve never seen it so I feel like it might be. But that’s why all of us are sinners because sometimes sinning is the only way to live.

Sticky Coconut Rice

Ingredients

Instructions

  1. Place coconut milk, water and salt in a saucepan and place over medium heat.
  2. Bring mixture to a low boil then add rice and mix to combined. Bring to boil then reduce heat to medium-low and cover. Cook for 20 minutes, until liquid has absorbed and rice is tender.
  3. Fluff rice with a fork before serving.
