Weekend Meal Prep!

Hello everyone and welcome back to another blog post on ~Foodie with a Passion~! Happy Tuesday everyone and I hope you had a great weekend. Today’s post is meal prep galore and who doesn’t love meal prep? A few hours on a day off pays off later in the week that you’re not frantically trying to make your lunches at 11pm. Alrighty! I made a whole bunch of meal prep on Saturday and spent most of the morning doing so. I even had a slow cooker going for soup so that became dinner and then some.

Banana Bread

I made my famous banana bread, which I have previously posted the recipe on this blog. I sliced all of them but froze half. This way we have some for breakfasts or snacks this week but also we’re not wasting any if we don’t finish eating a whole loaf.

Salmon Meal and Salmon Salad

I cut 3 pieces out of a fillet of salmon and cooked it with garlic salt, lemon pepper, dill and paprika. Two of them became salad and one of them became a meal with veggies and focaccia bread.

Bacon Wrapped Chicken Meals

This was a product Hubby had picked up at Costco one time. I baked these at 375°F for 40 min and it temped 165+°F. I pulled these out first and kept the banana bread in the oven for a bit longer. These were put together with roasted broccoli, cauliflower, potatoes and zucchini.

Chicken Noodle Soup

I chucked everything but the macaroni in the slow cooker and let it cook all day. Added the macaroni 45 min before we were going to eat and I added more chicken stock since the macaroni would absorb a lot of it. Served with dinner rolls at dinner and we have some for lunches this week too.

Not pictured was the breakfast burritos 🌯 and we had eggs, bacon and cheese with salsa wrapped in tortillas. These went straight to the freezer for breakfast for the next couple of weeks.
