In the weekly meal plan, you will find a week full of recipes with a complete grocery list.  Make your week easier by filing away these meal plans week after week.

Eggless waffles, Chicken cordon bleu, smores bars

  • Air Fryer Breakfast Recipe – Banana Cinnamon Roll Muffins
    • If you don’t have an air fryer, bake muffins in a muffin pan in an oven at 350 for 28 minutes.
  • Lentil Cauliflower Burgers with Yogurt Sauce
    • You can omit the egg to make this recipe vegan.
    • I like to use Panko breadcrumbs.
    • If you can’t find cauliflower rice with herbs in it, you may buy plain cauliflower rice and add herbs.
    • If burgers crumble while flipping, you can simply use them as a topping on a salad or bowl meal.
  • 5-Ingredient Vegetarian Black Bean Freezer Burritos
    • After you make your burritos, you wrap them in plastic wrap and store them in a ziplock bag in the freezer. Then when you need lunch, you just take it out of the freezer and microwave it!
  • S’Mores Bars Recipe
    • You can make these bars up to 1 day ahead.  Cool, after baking, cover the pan with foil and store at room temperature.  To serve, remove from the pan and cut.
    • Over time, the marshmallows will harden, but if you store them in an air-tight tin, the s’mores are good for several days.
    • Chocolate melting tips:
      • You could heat chocolate in the microwave using 50% power to prevent over-baking.
      • If you don’t have a microwave, you can heat the chocolate in a large heavy bottomed saucepan over low heat, stirring occasionally, until chocolate melts.
  • Avocado Toast with Hard-Boiled Eggs and Roasted Tomatoes
  • The Best Ground Turkey Tacos
    • This recipe makes enough taco filling for multiple meals. Refrigerate the leftovers in an airtight container for up to 4 days or freeze for another night.
  • The Best Eggless Waffles Recipe
    • Depending on what type of liquid you use, you may have to add a little extra liquid for the batter if the batter is too thick. For example, if you use whole milk, use an additional tablespoon to 1/4 cup water, or if you use a thicker milk (like buttermilk) you may need to use a little extra liquid.
  • Chicken Broccoli Alfredo Freezer Meal
    • If you choose to bake straight from the freezer, make sure it’s in a disposable container.  Do not put glass pan/dish in oven straight from freezer because it will shatter.
    • Tip: Pour Alfredo sauce in first then pour milk into the jar to get any last remnants out.
  • Freezer Frittata Recipe (with Salsa and Sausage)
    • Freezing instructions:
      • Allow frittata to cool completely. Slice into pieces and cover entire baking dish with aluminum foil, or divide pieces into individual containers, or plastic wrap individual slices and put in a freezer storage bag. Adhere a label and freeze. Freeze for up to 2 months.
    • Warm from frozen:
      • To warm, remove a piece of frittata from aluminum foil or container, and microwave on HIGH for 2 minutes, then allow to rest for 30 seconds, then enjoy! Depending on your microwave, you may need to microwave for an additional 30 seconds or until warm throughout.
  • 5 Ingredient Skillet Pizza Pot Pie Recipe
    • You can use pre-made pizza crust or you can make a  homemade pizza crust.
    • The oven-safe skillet I use is a LeCreuset, but you can find a more cost-effective option that works great as well!
    • I use diced tomatoes with garlic and onion, but you can certainly use plain diced tomatoes and add some garlic.
