Animal Style Cauliflower

This healthy cauliflower dish is sure to please even the pickiest of eaters. It’s packed full of flavor and at only 100 calories per serving, it’s a delicious option with zero guilt.

INGREDIENTS

4 cups cauliflower

1 Tbsp EVOO

1 Tbsp taco seasoning

1/2 cup shredded cheese

2 Tbsp bacon bits

Pepper to taste

INSTRUCTIONS

  1. Preheat oven to 425°
  2. Mix cauliflower, EVOO and taco seasoning in medium sized bowl.
  3. Pour prepared cauliflower onto greased baking sheet. Bake for 20 minutes.
  4. Remove cauliflower from oven and sprinkle with cheese and bacon bits. Cover with foil and bake for additional 10 minutes.
  5. Pepper to taste. Serve and enjoy!

Add any additional toppings you’d like! This dish would also be scrumptious paired with brown rice and chicken for a complete, well-balanced meal.
