Beef with Peppers

Happy Monday everyone!

Where have I been the past two weeks? This lady got a full time job two weeks ago so I have been trying to learn a completely new job and get used to being a working mom again. My days arent quite as flexible now than when I was staying home with the kids. So thats been an adjustment!

But this isnt to say I havent been prepping and working behind the scenes for this project to get some posts lined up! So, I want to jump into todays post: Beef with Peppers. This is a super quick and easy recipe to pull off. The ingredients are simple, and itll take ~30 minutes total to prep the ingredients, and then cook it all. Lets get into it!

Ingredients:

  • Stewing beef or sirloin steak cut into strips (the sirloin is obviously going to add more flavour and will likely be more tender, but stewing beef works and tastes delicious!
  • One Yellow onion
  • Three to four peppers
  • 5-6 tomatoes (skin removed) OR can of diced or stewed tomatoes
  • 1 tsp Worcestershire Sauce
  • 1-2 Tbs minced garlic
  • Salt and ground peppercorns

First, if you want a side with this dish, rice and quinoa pair well with it. Or cauliflower rice (which is what I used because of keto). But, you dont need to include another side as this is filling on its own as well! If youre going to include the side dish, you can get that started now.

Next, place a frying pan on your stove (or use an electric frying pan) and turn on to medium medium high heat. Pour one to two tablespoons of olive oil in the pan. Next, take your stewing beef or sirloin strips and place them in the pan. Begin to let them fry in the oil, stirring them around occasionally to help cook them evenly. Cut your onion into half-slices and add to the cooking beef.

Cut your peppers into strips. Once your onion has begun to turn translucent, and the meat is browning, add the peppers and saut them.

Finally, add 5-6 tomatoes (no skin) (or a can of diced or stewed tomatoes) to the mixture as well as 1 tsp of Worcestershire Sauce, 1-2 Tbs of minced garlic, salt, and ground peppercorns. Put the lid on the pan and let everything simmer for a few minutes.

Your rice should be complete by the time this fry has finished cooking so you can serve up!

The sauce that results from the culmination of the vegetables, meat and Worcestershire Sauce tastes very nice on rice.
