Cauliflower Steaks with Romesco Sauce

Vegan Cauliflower Steaks with Romesco Sauce are a deliciously flavorful dinner dish. They’re perfect for date nights, dinner parties, holidays, and they're easy enough for weeknight dinners, too. This oven roasted cauliflower steak recipe is vegan and gluten-free.

Cauliflower Steaks

I discovered the cauliflower steak a few years ago while taking the Rouxbe Plant-Based Pro class, and I haven’t looked back. Cauliflower steaks easy to make and incredible versatile. And they look great on your dinner plate, too.

I like to demo cauliflower steak recipes when I teach cooking classes, because of how easy and versatile they area. I’ve had clients tell me that they’ve seen them on Pinterest before, but they look too daunting. They’re happy to learn from me just how simple they really are.

Cauliflower Steaks with Romesco Sauce

The last time I showed how to make cauliflower steaks in a cooking class, I served them with my Easy Romesco Sauce. Cauliflower pairs really well with romesco’s tomatoey, peppery goodness. And romesco is sooo easy to make, so why not?

Romesco is a creamy sauce made with peppers, tomatoes, and nuts. Originating from the Catalonia area of Spain, it was often made by fishermen to be eaten with the fish they caught. Traditionally, it can be quite labor intensive to make. It usually involves toasting and grinding hazelnuts or almonds and roasting peppers and tomatoes.

Instead of roasting fresh red peppers and tomatoes, this easy sauce is made with store-bought jarred and canned varieties. Prepared almond butter takes the place of the toasted and ground nuts.

These steaks also delicious with pesto and chimichurri, if your looking to change flavor profiles.

How to Cut Your Cauliflower Steaks

  • First, you need to trim off any leaves from the cauliflower, keeping the stem intact.
  • Then, you should turn the cauliflower stem side up on a cutting board and slice it as if you were slicing a loaf of bread. The slabs should be about an inch thick or so.
  • Continue making slices through the stem until you have a few “steaks.” Most average-sized cauliflowers will give you three steaks.
  • You’ll have some leftover cauliflower florets. Use them to make tacos or buffalo “wings.”

How to Make Cauliflower Steaks

This recipe is so easy to make!

  • Once your cauliflower is sliced, you brush both sides with a little oil and then sprinkle each piece with salt and pepper. 
  • You bake the cauliflower in a 400° oven for 25 to 30 minutes, flipping them at the half way point.
  • Serve your cauliflower topped with the romesco sauce and chopped parsley.

Serving Your Cauliflower Steaks

I like to serve my steaks with a green and a grain. Serve them with steamed spinach and brown rice or sautéed kale and pasta. They're also great with arugula and mashed potatoes.

Ingredients
  

  • 1 medium-sized head cauliflower leaves and stem trimmed (do not core the cauliflower)
  • 1-2 teaspoons neutral flavored oil
  • ½ teaspoon black pepper
  • ½ teaspoon sea salt
  • 1 cup Romesco Sauce warmed
  • 1 tablespoon chopped parsley for garnish

Instructions
 

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • With the cauliflower sitting on its stem, slice it into large slabs, about 1-inch thick. Slice it the same way you would slice a loaf of bread. You’ll get two or three large slabs. Place them on the prepared baking sheet.
  • Brush both sides of the cauliflower steaks with the oil, and then sprinkle them with the sea salt and pepper. Roast the slabs for 25 to 30 minutes or until golden brown, carefully flipping them at halfway point.
  • To serve, place the cauliflower steak on a plate and top with the romesco and chopped parsley. Cauliflower steaks can be served with steamed greens and mashed potatoes, cooked rice, or pasta.
