This delicious cheesy potato casserole is a staple in comfort food. Shredded hash browns, sour cream, cream of chicken soup, onions and spices are mixed together before being topped with corn flakes and baked. The result is a delicious side dish just like mom used to make! 

Potato casserole goes great with meatloaf and beer marinated grilled chicken. Serve it alongside other classic side dishes including ambrosia salad, vegetable casserole and fried rice.

We love this savory and satisfying old-fashioned cheesy potato casserole. You might have heard it called funeral potatoes as well. It’s the best side dish — rich and creamy homemade comfort food oven baked from scratch. 

I serve this with dinner but it’s also yummy for breakfast or brunch with pancakes, eggs, or toast.

Ingredients needed for Cheesy Potato Casserole

You will need:

  • 2 pounds frozen hash browns
  • 1 can cream of chicken soup
  • 3/4 cup butter, melted (one stick)
  • 1 tablespoon garlic salt
  • Salt and pepper to taste
  • 1/2 cup chopped onions
  • 2 cups sour cream
  • 2 cups shredded cheddar cheese
  • 2 cups corn flakes, crushed 

Ingredient Substitutions and Additions:

HASH BROWNS: I use frozen shredded hash browns, but you could also use diced or cubed potatoes.

SOUP: Swap out the cream of chicken soup with cream of mushroom soup — or mix in a ranch packet. 

CHEESE: Add a 1/2 cup of cream cheese for an added creaminess. Swiss cheese would also work well in this simple, creamy dish. For even more flavor, you could also sprinkle the top with Parmesan cheese. 

CORN FLAKES: Instead of corn flakes, top this casserole with Ritz cracker crumbs, panko bread crumbs, crushed croutons or crumbled potato chips.

GARNISH: Top with crispy fried onions, bacon bits, fresh parsley, scallions or green onions.

ADD-INS: You can make it with meat for a big, hearty meal: ham, hamburger, bacon, or sausage. Make it Tex-Mex style and add some Rotel to the mix for an added kick. You could add broccoli or peppers as well.

How to Make Cheesy Potato Casserole

STEP ONE: In a medium bowl combine the soup, ½ cup melted butter, garlic, salt and pepper, chopped onions, sour cream, cheddar cheese. 

STEP TWO: Place the hash browns in a large bowl. Pour the soup mixture over the hash browns and stir until well combined.

STEP THREE: Prepare a 9×13 casserole dish with nonstick spray and pour into prepared pan.

STEP FOUR: Combine the crushed corn flakes and remaining melted butter and sprinkle evenly over the top of the casserole.

STEP FIVE: Bake at 350 degrees for 45-55 minutes.

PRO TIP: You can put this together the night before, cover well, and put in the fridge. Before baking, uncover and let sit on the counter for 30 minutes before baking. 

Can You Freeze This casserole?

You sure can freeze this cheesy potato casserole! You can prep and freeze the entire dish or freeze individual leftovers. 

For the whole dish: I would recommend using throw-away foil pans so that your good baking dishes aren’t tied up in the freezer

For leftovers: Store in a freezer-safe container for easy heat and serve leftovers anytime.
