These cauliflower mashed potatoes makes a perfect and healthy side dish to dollop onto your plate of fresh food. Enjoy at your holiday festivities, or at any other time cause they're just that good!
Raw Cauliflower Mashed Potatoes [Vegan, Raw]
- 2cupscauliflower florets
- 1/4cupcashewssoaked for 2 hours
- 2tablespoonsnutritional yeast
- 1teaspoondried herbs of your choicee.g. thyme, parsley, rosemary etc.
Blend all the ingredients together in a food processor, for a good few minutes, until the texture is creamy and resembles mashed potatoes.
You may need to add a tablespoon of water to help with the blending process. Don't add more than one or two, as it will end up too watery.
