How do you cut lettuce for a wedge salad?

Once the outside leaves are removed, cut the head of lettuce in half. Because the Tanimura & Antle Artisan® Baby Iceberg lettuce we are using is a baby variety, we stopped there. However, with a typical head of iceberg lettuce, you’ll want to quarter the lettuce. Be sure to remove the stem of the lettuce as well.

What Ingredients Do I Use for a Wedge Salad Board?

The options are endless. Traditionally you can use the following ingredients:

  • Tanimura & Antle Artisan® Baby Iceberg Lettuce – sliced in half or quartered.
  • Tanimura & Antle Artisan® Sweet Italian Red Onions
  • Crispy bacon
  • Tomatoes – you can use any variety you’d like. We like using grape or cherry tomatoes.
  • Bleu Cheese Crumbles
  • Colby Cheese Cubes – shredded cheese also works.
  • Cucumbers – again any variety will work here.
  • Hard Boiled Eggs
  • Parmesan Cheese Crisps
  • For the dressings we chose: Blue Cheese, French and Ranch. You can use store bought dressing or make your own. It’s totally up to you and the time you have.

How to Build A Wedge Salad Board

Start by preparing your ingredients. Brown the bacon, dice any vegetables, and hard boil the eggs.

Next, prepare your lettuce. Cut in the Tanimura & Antle Artisan® Baby Iceberg Lettuce in half. Remove the outside leaf. Once the outside leaves are removed, cut the head of lettuce in half. Because the Tanimura & Antle Artisan® Baby Iceberg lettuce we are using is a petite variety, we stopped there since it creates the perfect-sized wedge. However, with a typical head of iceberg lettuce, you’ll want to quarter the lettuce. Be sure to remove the stem of the lettuce as well.

On a prepared tray, serving or cutting board (either parchment paper or food approved tray), place 3 bowls and fill with the dressings, placing a spoon in each. Around the bowl of dressing place all salad items that you are going to be using.
